Boggy Creek Airboats (http://www.bcairboats.com/) are the local ones to Orlando, operating from two sites - they're both good, but I have a slight preference for the Southport Park one.

The best ones I did was down the everglades, but got bitten to bits as no one warned us about the mossies!!
