If you are looking just at the Disney parks, the following may help (but don't forget the likes of SeaWorld and Universal etc at Christmas)

At Magic Kingdom, you have the MVMCP which you've already booked. Info HERE (http://www.wdisneysecrets.com/index.php/walt-disney-world/163-magic-kingdom/389-magic-kingdom-special-events.html)
This party includes a christmas parade, fireworks, castle lighting, snowfall etc - we have videos HERE (http://www.wdisneysecrets.com/index.php/walt-disney-world/163-magic-kingdom/382-magic-kingdom-videos.html)

At Epcot, you have the Candlelight Processional HERE (http://www.wdisneysecrets.com/index.php/walt-disney-world/165-epcot/794-special-events.html). There is also the story of Christmas told by Father Christmas in the various countries of World Showcase.

At Hollywood Studios, you have the Osborne Lights HERE (http://www.wdisneysecrets.com/index.php/walt-disney-world/164-disneys-hollywood-studios/786-disneys-hollywood-studios-special-events.html)

Aniaml Kingdom has a special parade called Mickey's Jingle Jungle Parade towards the bottom of THIS (http://www.wdisneysecrets.com/index.php/walt-disney-world/162-animal-kingdom/740-animal-kingdom-shows-a-parades.html) page.

The Christmas decorations at the parks are wonderful and you'll also see many of the characters with plenty of photo opportunities.
You also have dance parties etc with a Christmas theme - even Downtown Disney have parties of an evening and entertainers which we love.

We particularly enjoy the storytellers in each country of the World Showcase. Some are Christmas themed and some are not. Those countries that do not focus on Christmas have some pretty neat alternative stories to tell!

We also enjoy the lights at DHS, although it's not quite the same as it used to be it's still impressive!

We don't do the Candlelight Processional in a formal sense. We tend to wander by and make an effort to see the narrator if it's Marlee Matlan or Whoopi. :D

Mostly it's the spirit, the energy, the whole "joy to the world" sort of feel that you will find at WDW during this time of year. No better way that I know of to get into the Christmas spirit.

Also take the time to visit the various resorts and have a look at their decorations. They are all different and beautiful.
