Scheduling is never easy is it :surrender: which parks are better in the evening? Which rides are most fun in the dark?
If I can work out where to go in the evenings, I think I can then fill in the days

This is a bit of a tough one to answer.
Both MK and Epcot are worth visiting in the evening if only to view the fireworks that take place each evening.
As the majority of the rides are indoors, then it doesn`t really matter if you do these in the day or the night IMHO.
Remember that Fantasmic is an evening show at the Studios which is also worth seeing.
AK tends to close in the late afternoon so your query doesn`t really apply here.

yep I think Slowhand has said it all really.
MK is great of an evening. The fireworks, night time parade especially the spectromagic parade. Some of the rides are just better too, the jungle cruise is better IMHO, haunted mansion feels more atmoshperic and so on.
EPCOT is great the whole time but illuminations is wonderful.
AK is closed so thats that and the studios has fantasmic but not much else going on late unless christmas time when they have the osbourne lights

I agree. One attraction I enjoyed the most at night is Big Thunder Mountain. It is a completely different ride at night. One night we were ridding the fireworks were going off and as we climbed we watched them and it felt they were right in front of us. You have to try it.
