Is it allowed to try and cut down on food costs, to take food and drink into the Disney parks?

We usually take some fruit, cookies and potato chips, just to keep us going

This is correct.
You are allowed, however, to bring in coolers into the waterparks. We have seen soft sided and hard sided.
We've never once had a problem with bringing in our soft sided cooler to any Disney park. It's a good size (and can get quite heavy) and no security check has ever prevented us from bringing it or its contents in. Once, we forgot and left a butter knife in it and they hemmed and hawed, but decided since it didn't have a sharp blade to let it through.
We don't bring glass, or alcohol, but anything else is fair game (again, only at Disney parks).
The other parks have varying restrictions that they may or may not enforce.
You arent allowed to take family size snacks into aquatica - or drinking straws etc. Not disney i know, but just thought id mention it!
Sea World and Universal have restrictions too...
