Chris really wants to go and give it a try, but I won't be able to do it with him, so unless he can talk someone else into going with him he'll have to wait :lol:

What about the activities at Fantasy of Flight (http://www.fantasyofflight.com/) between Orando and Lakeland just off I-4? They've got biplane rides, balloon rides, and a great aircraft museum.

Or, if you've got money to burn, there's always the "Fighter Pilot for a Day (http://www.cloud9living.com/orlando/fighter-pilot-for-a-day)" experience.

Highly recommend the hot air balloon, we used Orlando balloons and they were fantastic.
Titanic experience was good (me being a huge titanic fan - not just the film). The first time we went we were the only people on the tour and the guide was really good. The second time there were a lot more other people and it lost its spark a little.
The NASCAR ride alongs at WDW speedway are good as well if you like that sort of thing.
We did an airboat ride once which was really good.
This time when we go I wanted to go to mount Dora and do a Segway tour but with our little one we probably won't do this now.

A couple of years ago I did the parasailing over Bay lake behind the Contemporary Hotel. It was a blast.
