If we try and save money by using an american airline, we'll have to change in america.

Do we have to get all our bags off and go through immigration and customs at the stop or is it all at the end point as usual?

You will have to clear customs and immigration at your point of entry into the US.
The flight from there to Orlando will be an internal flight so you won`t have to go through the ordeal twice on your journey.
