I make it often but it's not like the American version, it my own way, but you are welcome to try my recipe:-
I make a cheese sauce with butter, flour and milk and lots of grated mature cheddar (sorry, I don't know quantities, I just do it )
I boil the macaroni in salted boiling water and then a couple of minutes before it's ready I add frozen supersweet sweetcorn and peas, or Tesco special mixed veg - this is purely optional but it's what we like
I then drain it and put macaroni in a deep dish, add the cheese sauce and mix in, I then grate lots more cheddar on top and grill to crisp it - as you can tell, this isn't a low fat recipe
We have it with either homemade chips or jacket potato

pretty much the same here....i use mature cheddar, i love a really cheesy flavour.
melt the butter, add flour and a teaspoon (ish) of mustard powder. sometimes i throw in a clove of garlic with the milk. to make it a bit quicker i put a jug of milk in the microwave to warm through then add that to the roux.
mix into (or pour over) pasta and either grill it with extra cheese on top or serve as it is.

i used to always make a roux too (ha ha) but Tesco's does a nice cheese sauce- i pour that on and bake with some sliced tomatoes.
this is a nice recipe too

Everyone I feed this one too raves about it.
Macaroni & Cheese (uscwest)
¼ - ½ pound of butter (125-250g)
3 cups of milk (I use low fat, not skim/fat free)
1 medium onion
Flour (I don’t measure, I just add it until it looks about right for a roux)
4 flavors of cheese (approximately 3-4 cups) cubed or shredded
Note: Here I can buy a 4 cheese blend in my grocery store with cheddar as one of the blends. But basically any 4 complementary cheeses can be used
1 pound (500g) box of Elbow Macaroni
Salt and pepper to taste
Paprika To Taste (I use hot Hungarian)
If desired a goodly size chunk of smoked/cured ham
Melt the butter over medium heat
Cut and dice the onion and sauté in butter and salt and pepper until just soft
Sprinkle in the flour and stir until it thickens.
Add the milk and bring to almost a boil.
Remove from heat and stir in cheese until it melts, if you are using ham you can dice it up and stir it in at this point also.
Heat oven to 375F / 190 C
While doing the above, in separate pan boil salted water (I also add just a touch of Extra Virgin Olive Oil). When the water is boiling, add the macaroni and cook according to directions.
Drain the macaroni and return to the pan. Stir in the cheese mixture.
When it is well mixed turn it out into a greased baking pan
Top Mixture with a sprinkle of paprika
Place in Oven for approximately 30 -40 minutes.

oh yeah i forgot about the Tesco cheese sauce, but you just can't beat a cheesy cheesy homemade one.....yum yum yum!

I like the idea of adding sweetcorn etc. It's for a vegetarian so that would be ideal.
