How about a mufaletta without the meat? Do you eat cheese? That would be quite tasty and is the original picnic sandwich (courtesy of New Orleans).

I make this alot during the summer:
Pasta Andrew;
1 pound fresh ripe tomatoes cut in wedges
1 cup(8 ounces) packed fresh basil leaves
2 cloves chopped garlic
2-3 Tbsp. olive oil
8 ounces of Camenzola cheese ( or may substitute brie or fresh parmesian or gargonzola)
salt, pepper
6-8 ounces of cooked hot pasta drained
Place tomatoes, basil, garlic and oil in blender( sometimes I add a good shot of balsamic vinegar too!) Pulse until coarsely chopped but not pureed. Combine cheese and tomatoe mixture in a large bowl and toss with pasta.
If I'm serving it for dinner I use angel hair pasta and serve it right away, If I'm brining it some where I use a small shaped past like orzo and serve it chilled( room temperature is good too!) Pack some nice crusty bread and peaches plus a bottle of wine and you're set!
