Please don`t apologise....we love answering questions anyhow.
Ok IMHO the best sit down restaurant that we have tried at Epcot is The Bistro de Paris. [The upstairs restaurant in "France".]
It`s not the cheapest but the service and surroundings are really nice. Also if you are lucky you will be able to get a window seat for a great view of Illuminations.

I absolutely agree with Slowhand here. Bistro de Paris is great, but as he says expensive.
Chefs de France - we have only eaten here during the Candlelight Processional and were less than impressed. Lots of folks like Le Cellier in Canada but it is difficult to nab an ADR because it is so popular. We like Marrakesh in Morocco also.

I do enjoy Le Cellier and it is very difficult to get an ADR there. However, dinner will soon be going up to 2TS credits on the DDP so it may be easier to snag a dinner ADR.
Biergarten in Germany is fun, cheaper and the food is pretty good.
Chefs de France has a prix fixe lunch menu that is quite a bargain by Disney standards and it's very good as well.
The best counter service would have to go the Tangerine Cafe in Morocco. It is hands down way better than Restaurant Marrakesh.
I love Tokyo Dining as well.

Re: which epcot restaurant?
Chiming in a bit late, but we too love Bistro, especially the degustation menu.
They will let you share, so it's not crazy expensive.
We've had nice meals at Morocco's full service, Marrakesh, and at Le Cellier, but to be fair that was some time ago. The last time we dined at Le Cellier (years now, at least two) it wasn't half as nice as it used to be.
We still like the Rose and Crown too!
Germany used to be nice with the buffet and the entertainment, but they've really ruined the buffet there.
Haven't tried the new full service Mexican restaurant. It looks lovely though.
