which disney restaurants really need advanced reservations?

I know in theory we should book everything we want to get in advance but which restaurants really really need us to do that?

Sadly, pretty much all of the sit down restaurants will require that. If you have any hope of getting in. Since the dining plan has come into existence, ADR's as they're called are pretty much mandatory everywhere.

Yep, they all do.

By chance I asked Mama Melrose in DHS if they had an opening for the evening and was then basically laughed at.

The days of walking into any WDW restaurant, park or resort hotel, are long gone. If you do not have an ADR the chances that you will not be able to have a full service meal are very real.

If you are ok with counter service (and given the serious fall off in quality of food since the inception of the DDP) then don't worry a bit about it.

EPCOT's World Showcase has some very nice counter service places, as do many of the parks and some of the resorts. Remember that the All Stars and Pop Century have great food courts (as does Riverside Port Orleans and the French Quarter) so you do have some choices other than being forced into pre-booking meals at full service restaurants.
