The carriage ride at the POR!! Dh and I had such an amazing time 
I packed a few plastic "fancy" glasses and a few adult beverages and we just relaxed and enjoyed some quiet time. Loved every minute of it

Chip and Dales Campfire thingy at Fort Wildnerness! It is good fun and not just for kids - you can buy marshmallows to toast on the open fires and there is an entertainer and chip and dale visit and then there is a movie on the big screen after!
It's free too!

A couple years ago my wife,son and I all went para-sailing behind the Contemporary. It was super fun. I could see the Castle and Space Mountain from a different point of view. My wife and I also did the couples massage at the spa located in the Grand Floridian.

I would highly recommend the segway tour at epcot, they are brilliant fun and you get to see the world showcase when no one is there. Also the steam trains tour is wonderful behind the scenes look at the trains and monorail trains. Again you get to see magic kingdom EMPTY first thing in the morning.

At Downtown Disney opposite the World of Disney there is one of those posh coffee kiosks. Get a frozen cappucino, sit on a bench and watch the world go by.
Then go to the Lego store and play with the lego.
