We have never done either of them. If I may ask...what is the approximate cost of the cruise?
Are they on the larger boats that are used to transport guests from Boardwalk to DHS or are they more or less smaller "private" boats? In the past I was looking for a special evening to celebrate a family milestone and someone recommended a private cruise with drinks and dinner (think that was it) but it was way out of our budget.

My info will be old, 'Skip, but may give you an idea.
I've not seen it in awhile but there is a reproduction ChrisCraft that used to be in use. It's beautiful! Otherwise, for the Illuminations cruises it's usually a pontoon boat. These cruises were running about $150.
For Wishes, I've only been on the yacht, Grand I. It's beautiful. The cost (for me anyway) was prohibitive. I think when I last checked it was something like $450 an HOUR. Not positive about that, but regardless it was pricey.
WDW-PLAY is the connection for info, I think? Although, to be honest, I always call WDW-DINE for any purpose and ask them to connect me with the right "department."
