book it or wing it?
if we do book for this summer will we be able to just walk into any restaurants in the parks or will they be all booked up?

In my opinion, if there is anywhere you definately want to eat at (especially newer restaurants such as Be Our Guest) I'd book.
We usually go to WDW over the Christmas / New Year week when we find if we haven't booked then we can't get reservations. However, the past couple of years we started to visit in the school summer holidays and found we could get reservations fairly easy. BUT I wouldn't chance the more popular/new restaurants.
I have booked Be Our Guest for July.

Sadly the days of walk ups are gone at WDW
In some of the slower times, you may be able to get something at the less popular restaurants.
If it was me, once you have decided if you are going, then I would look at what restaurants you might like to eat and then see about making a reservation. You can always change them once you arrive, it just makes sure you have something.
