When we were there in extreme heat I bought a parasol in Epcot and carried that.
I always have an ordinary little fan with me and a pack of cooling wetwipes. A damp cloth carried in a sealed plastic bag is great too.

Drink lots of water, wear sunscreen (you definitely can't manage if you have a bad sunburn), take breaks, and try to do outside stuff early or really late and then inside stuff during the heat of the day.

I have a little fan and a then take a washcloth and wet it. It works pretty well.

What everyone has said.
I like to use the little fans (about $1 at Walmart) without a mister to help move the air when I'm stuck in a queue or someplace where the air just isn't moving. The misting bottles just add to the humidity--and Orlando already has plenty of that!
If I could find a traditional hand fan at a reasonable price, I'd probably use that rather than a battery operated one. But they're all $5 and up for one that won't fall apart with the first use. Lots of labour in those little things! My mother had a collection of fans and I have some that I use them at home when it's really hot. I just won't risk losing them at WDW.
