      Crisco is a name brand for a solid vegetable shortening. I googled it and Cookeen is a similar brand in the UK.

      You'll want a coulis type of sauce for your cheesecake Josh. Use whatever berries you prefer and cook them with a bit of sugar (to your taste) and once all bubbly and broken down, strain to remove all seeds. Use the sauce on the cheesecake.

      Or, use a chocolate sauce. Or, use a berry sauce and a chocolate sauce. Or make a peanut butter sauce. (That's only going to be good if your cheesecake will be complemented by the peanut butter flavor).

      Not so sure I'd like cookies in my cheesecake. I'm all about texture though, so would want mine smooth and creamy-ish (not dry, but definitely NOT mushy)!

      Herself is the cookie baker. (And delicate things maker). She'll tell you it's the Crisco (although some of the cookies do have only butter, or a mix of butter and Crisco) that makes them soft and keeps them soft. Butter makes for a thin and crispy cookie.
