Have you thought about doing it through a travel agents? you get a wedding co-ordinator when you arrive over there to go through and finalise things

we cant book through a tour operator as we have booked the holiday independently so thats out

You could try something like booking your own reverend and chooosing the place yourself......such as Cypress Grove.
