    So, you don't like the suggestions so far? Let me know what's bothering you and we'll have a go at James Beard. He's the ultimate authority on nearly every sort of meat... :D :D

    You can have a roast that is quite succulent, it just takes timing, and understanding about carry over cooking. We always roast and haven't had a dry one yet.

    We have however ended up with sawdust from a crock pot! Just because it's tender doesn't make it moist. :D
