what do you have for your main meals midweek? i'm fed up of what we usually have so looking for some ideas...........please
I love tacos. It's one of my favorite meals.
I might not be the right person to answer as I cook for one and then eat the same meal for several days.
Vegetable chilli is brilliant, a firm favourite in our house Also vegetable stir fry . Goulash is lovely and easyish to make too I'm a vegetarian so my Mum usually eats veggie food with me just for convinience Egg fried rice is a really easy home cooked meal too!
Have you tried making rissoto?
I love fried rice! One meal where I don't need meat, but chicken is good in it.
This is tasty and my family love it and it costs pennies to make... delish with crusty bread.
All in one pot and no messing about. Add the stock and water and pepper only, no salt needed. bring to a gentle simmer not a rolling boil, turn it down and let it simmer gently so no burning or scorching happens.
Packet of the cheap basic smoked bacon, cut into pieces with kitchen scissors.
2 leeks, wash and slice, add to pot.
6 carrots, chop and dice, add to pot.
Pots about 6 good sized ones, peel, slice and chop into cubes, rinse under cold running water before adding to pot.
1 small tin of peas pudding (essential) add to pot.
2 Ham stock cubes or those new jelly things that Marco Pierre White advertises
4 vegetable stock cubes or jellies. Add water from kettle that has boiled and is on cooling.
Add pepper, no salt because of the bacon and stock cubes.
Put on stove and bring to a slow simmer gently until pots are tender, won't take long about an hour or two tops.
You can either leave chunky or blend smoother.
Don't add anything else or take anything away, except maybe add another pack of bacon if desired. Don't use the good stuff it really isn't worth it and you won't notice the difference, plus I get a lot of good bacon cuts from these packets.
As Josh mentioned...we often have a risotto midweek. You do have to stand and cook it for half an hour but I find that quite therapeutic, and the good thing is you can put so many different ingredients in. This not only makes it different every time, but also means you can throw in anything that is lying around that hasn't been used up.
I'm struggling to remember anything else we have as it is so close to Christmas and we're still eating all hte weird stuff
Our workweek dinners usually consist of a mixed green lettuce salad with tomato and onion (add whatever else you please) and a protien that is grilled, or roasted. Pork tenderloin is dead easy, as is chicken breast of course. It's about as healthy as you can get, and fast. Oh, and we usually add a steamed or grilled/roasted vegetable (such as asparagus) with it.
