    My pasta and roasted peppers, tomatoes, garlic and onions with basil that i did for Sarahs birthday nibbles on Sunday....it was blooming lovely even if I do say so myself!

    it was so delicious. I roasted the veg the day before and left it all in a pot in the fridge so all the oil and juices came together then when I cooked the pasta the next afternoon all I had to do was mix in the veg and scrummy juice and scatter the basil leaves.....

    oh - my - g_d it was divine! I was bit naughty and sprinkled a little soft light brown sugar over the veg while it was roasting wow what a difference though!

    and the smells coming from the oven were......mmmmm, scrumptious!

    sorry, i was just so impressed with how delicious it was I had to tell you!

    Honestly? It looks like something you'd see in a cook book, it's that pretty.

    I too love the colors, and it looks so fresh with the whole basil leaves.

    ahhh thanks everyone!

    Sunday evening was perfect, well almost....havign Sarah there would have made it perfect!

    It was truly lovely, and even quite funny at times. Especially when we were all setting the lanterns off.....one almost hit hubby on the head, Sharon and some others were running after it as it went sideways instead of up! Another got stuck in a tree before continuing on it's sideways journey!

    Honestly, family and friends all together made it was a wonderful tribute to our girly.
