Sugar/cane is big in the islands. Pineapple to a certain degree too. RUM of course! :D :D Those little individual flavored (rum, or what ever) cakes that look like little bundt cakes? They are all over the place.
Fish... snapper is big. You could do pockets of fish and veggies...
Meat pies. The Jamaican style have that deep yellow corn bread type crust.
HOT, HOT, HOT!! Habaneros are often used to flavor some of the food.
Conch chowder of course! :D

I have been going through some recipes today actually and I think i am going with
Rice and Peas
Griddled Plantains (hope i can get them locally),
Vegetarian Fritters using calaloo which is a spinach type vegetable
Maybe a Calaloo curry
Mango Chutney, Potato Salad and Coleslaw (Jamaican style!)
I have a Spiced Loaf which i may serve with cheese, and am trying to decide on a dessert.
drinks...hmmm. I will get some red stripe beers, and make a non alcoholic tropical juice and an alcoholic one!
