    My father-in-law showed up on my doorstep on Friday with a huge amount of fresh-picked blueberries. I made this recipe on Saturday...it was a HUGE hit and it's just to die for. We served it warm with vanilla ice-cream.

    Blueberry Buckle


    3/4 cup white sugar
    1/4 cup butter
    1 egg
    1/2 cup milk
    2 cups all-purpose flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 cups fresh blueberries

    1/2 cup white sugar
    1/3 cup all-purpose flour
    1/2 teaspoon ground cinnamon
    1/4 cup butter, softened


    Preheat oven to 375 degrees F (190 degrees C). Grease one 8x8 inch pan.
    Cream together 3/4 cup sugar, shortening, and egg.
    In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8x8 inch pan.
    To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Sprinkle over cake batter.
    Bake at 375 degree F (190 degrees C) for 25-30 minutes.



    The batter will be really thick...just spread it in the pan and then put the crumb topping on.

    Blueberry pancakes, muffins, jam, pie, cake, blueberry butter..... I dont know how good Allrecipes is for blueberry recipes but I love that site. I planted a blueberry plant last year so am enjoying picking the fruit this year. Yummy! Enjoy. :p015:

    Figment...just checked the cupboard...I have everything I need for the Blueberry Buckle...think I'll make that one for the monster-in-law tonight....it sounds DELISH!

    It is! We bought it at Le Gourmet Chef at Premium Outlets. (I love that shop with all those tasty bits laid out to taste) and it was the best jam/jelly Ive ever tasted. Yum yum.

    I love blueberries but I don't think I've ever tasted anything with them in except blueberry muffins!

    I think also the picture of the van in the pool is Johnie's AFTER the rum!! lol
