Yep pretty much all the current phones are tri/quad-band and will work with at&t/tmobile etc in the US (verizon is a different story).
You can use a uk pay monthly or pay as you go in international roaming but you must call your cell provider to make sure the option is turned on BEFORE you go. Roaming costs a fortune especially with data and calls (texts arent bad) so pay as you will use a LOT of dosh very quickly.
The most cost effective option is to buy a US pay as you go simcard perhaps off ebay before you go. You must make sure that your UK phone is "network unlocked" for it to use the Sim and it wont work until you're over there obviously. You can then top up and it will be very cheap to text to and fro etc. You sometimes even get free international minutes depending what you go for.

I do always get a US sim though, I bought a load of sims when we were out there last year and I always use RedPocket. Now that I have the sims it's so easy to just put some money on the account and it's ready to use when we get there. I think I've converted Keith as well

Having a sim to keep in touch really is nice
I spent so so long working on this problem. It was a lot more important before Disney got wifi in the park and resorts but still.
I never found a better way then Wendy's link to redpocket.
Make sure your phone is unlocked, buy the sim. Before you go, buy a top up code online and apply to the account either before you go or when you get there.
I put the US sim in my phone on the plane and do the setup of the network settings. Then soon as I get through the airport, it's all working.
(you can download the settings automatically for most phones from the redpocket website which is perhaps worth doing whilst you still have an internet connection)
