Disney seems to be going big on food trucks good or bad idea
As long as they take credit cards, I'm happy.
I've never bought anything from a Floridian food truck before - I can't imagine they have the variety to satisfy an entire family's differing tastes?
We used them a couple of times instead of counter service meals. Hubby loved the lamb meatballs at DHS.

The types of food available will include:
Favorites from Disney parks, including Croque Monsieur from Magic Kingdom, Glass Noodle Salad from Hong Kong Disneyland and Hand-dipped Corn Dogs from Disneyland Park.
The World Showcase of Flavors
Items from the Epcot International Food & Wine Festival, including Grass-Fed Beef Sliders, Pierogies with Kielbasa, and Lobster Rolls.
Different versions of meatballs, including Lamb Meatball Flatbread with Tzatziki.
Dishes using a variety of spices and served with Naan bread, including Butter Chicken, Slow-Cooked Beef Short Ribs and Tandori Spiced Shrimp.

Food Trucks are a hot topic here, and particularly in the Orlando area. With typical stupid government interference, Orlando city has regulated to the point of stupidity, the ability of food trucks to sell their products. That's why you see them outside the city area more than not.
We've gone to some "food truck" nights (not at Disney) and haven't really been too impressed to be honest. The food was overpriced for what we tried, and we could have made what we purchased, better. Not going to apologize for that comment either. If I can cook it better than you, I'm not going to be happy to pay you for your efforts.
Now, the food trucks in Vancouver, BC are another matter! Fabulous and unique offerings that are fairly priced and often situated near an area where you can sit and enjoy your purchase.
Only saw one while we were there and it wasn't open.
