Narcoossee's-Disney's Grand Floridian Beach Resort 1- 10 inch cheesecake 2 pounds cream cheese 3/4 cup sugar 3 tbs heavy cream 3 tbs sour cream 6 eggs 2 tsp lemon juice 1 tsp vanilla Pie (pastry) dough, enough for the bottom of a 10-inch cake pan. Grease a 10 inch round loose bottom cake tin. Roll out pie (pastry) dough and line bottom of the pan with dough. Preheat oven to 300 degrees, 150Centigrade or gas mark 2. In a mixing bowl, cream cream cheese and sugar. Add heavy cream and sour cream, mix till smooth. Blend in eggs, one at a time, mixing well after each addition. Add lemon juice and vanilla, mix until smooth. Pour cake mixture into a cake pan and bake in a water bath (bain-marie) for approximately 2 hours or until filling is set. remove from oven and allow to cool at room temperature for 1 hour. Remove from pan and refrigerate. Serve cold with fresh berries.
