Sadly, my Pumpkin pie recipe only involves removing the frozen pie from the freezer and baking it according to the package directions.

Not much help I'm afraid! :nono:

 Yes you are right, carving pumpkins are not for pies! I too use Libby's and add just a touch more ginger to mine!

I made pumpkin pie from leftover carved pumpkin once and it was yucky. The carving variety of pumpkins are not the best for cooking - there are different varieties for that.

    And tins. :D

There are fresh pumpkins that make nice pies, but they are much smaller than jack o lantern pumpkins (and their flesh is different, more dense, less grainy, and a deeper color).

Libby's is popular because it's smooth, and consistent (and not watery, like fresh pumkin can be).

I use a variation of the recipe on the can, but add quite a bit more of the spices to it than the recipe calls for. We like our pie nearly savory and dark.

Be careful to if you use a deep dish pie pan, you'll need 1 1/2 of the recipe for the filling or you'll have a sparse pie!

Does anyone know if the seeds are of use to birds?

If you know anyone with a parrot they'll eat them. :D

Pumpkin seeds are a bit big for the normal garden seed eating birds. If you put them out you're most likely to get pigeons and starlings.
