It definitely used to be after Thanksgiving that the Christmas decorations went up. Now they start putting them up as soon as Food & Wine are over. To me it just isn't the Christmas season though until Thanksgiving. That weekend you can expect the parks to be quite busy. I'm not sure there are any quiet times at that time of year though.

I thought I wasn't going mad! It was pretty quiet the beginning of December when we went in 2012 and equally at the end of August beginning of September in 2011 (apart from labor day weekend)

It was anything but quiet in 2013. A Tuesday night MVMCP was so crowded you couldn't move or hear yourself think

What date was that John? We were there until the 12th I think, there were some crowds around the opening of fantasyland but not really noticeable anywhere else. I hadn't been to MVMCP for 9 years, not sure I'd go again, it just didn't have the same feel for me. It wasn't crowded for us, bit certainly not as dead as it was 9 years ago :)

We try to make a September trip each year for the F&W Festival. It's our favorite time to go :) Can't wait to go back this year!

We have been to WDW quite a few times usually at the Thanksgiving break. It is a natural for our teaching schedules here in the states. Although it is a bit crowded it is a really nice time to be there. For the most part hurricane season is over, the weather is really pleasant and the crowds are what they are. If you know that ahead of time it eases some of the pain. We will probably be going back there next year at Thanksgiving. (did I just say that out loud??? Yay)

And as others have said it used to be so awesome with an overnight change to the Christmas decorations. In previous posts I mentioned that on our first stay (at the then named Disney Inn) that overnight a Christmas tree popped up in the hall outside our door. What a surprise when we opened the door in the morning to get our paper and saw it. The parks themselves seemed to bloom overnight. It was truly magic. Now..ehhhh. I had the gradual build up or an early start to the season that seems to get earlier and earlier every year.
